A Horse is a Horse, of Course of Course

Or it could have been a pony. Or even a donkey. I have no idea. Point is, Everett was only too excited to ride his first four-legged animal. I mean, honestly, doesn't this face just scream, "I'm so excited and I just can't hide it?"

We traveled up to Ellijay last weekend for the Georgia Apple Festival. It was super fun and there was loads of apple-inspired food. I had a delicious apple dumpling that was to die for. Seriously, it was one of the main reasons I wanted to go. It was a beautiful fall day and the highlight for Everett being the horse/pony/donkey ride. He put up a pretty big fight when the ride was over.
And for those of you who have more apples than you know what to do with, may I suggest the following recipe. I've made it several times, always to rave reviews. Perfect with apple cider or a cold glass of milk. Happy baking!


Grandgirl's Fresh Apple Cake from Georgia

Cake: Butter, for greasing pan
2 cups sugar
3 eggs
1 1/2 cups vegetable oil
1/4 cup orange juice
3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground cinnamon
1 tablespoon vanilla extract
3 cups peeled and finely chopped apples
1 cup shredded coconut
1 cup chopped pecans
Sauce:
1/2 cup (1 stick) butter
1 cup sugar
1/2 cup buttermilk
1/2 teaspoon baking soda

Preheat the oven to 325 degrees F. Generously grease a tube pan.

For the cake: in a large bowl, combine the sugar, eggs, oil, orange juice, flour, baking soda, salt, cinnamon and vanilla extract; and mix well. Fold apples, coconut, and pecans into batter.
Pour the batter into the prepared pan and bake until a tester comes out clean, about 1 1/2 hours.

Shortly before the cake is done, make the sauce: Melt the butter in a large saucepan, stir in the sugar, buttermilk, and baking soda, and bring to a good rolling boil, stirring constantly. Boil for 1 minute. Pour the sauce over the hot cake in the pan as soon as you remove it from the oven. Let stand 1 hour, then turn out onto a rack to cool completely.

Dang girl, how come we weren't invited!?!?!!?!? :] LUCKY! Oh man, that was the best time when we went w/ you guys. Those apple dumplings were outrageous and I'm still trying to find a yummy apple bread recipe like they had. Oh we loved that place. I'm so glad you could go and enjoy it. We wish we were there with you. Thanks for sharing the recipe. I'm way excited to try it-yes!

Oh and um, I do believe from the glimpses that I can see, that Everett is riding a Pony-yes it does look like it would be classfied as a pony. :] So darn cute!!! What a lucky boy; his expressions are really hilarious and cute. Kids are so funny with animals and in such awe. When we were home in MT (Aug) at the petting zoo at the fair, my little nephew just walked up to the minuature horse and put his hands up, indicating he wanted up and to ride-ummm-not at the petting zoo. We did just sit him up on the immovable pony though and he sure didn't want down either.:] Great! You've got a cowboy on your hands-YeeahaW!

There were ponies there?! Adam, Georgia, and I were also at the very same Apple Festival (our yearly tradition!) and we did not see any ponies. That would have been fun, because Georgia was pretty antsy so we were desperately trying to find things she would enjoy! Her favorites were the dancers pavilion and the big monster truck jumping gym with the kids blow up toys. Thanks for posting the recipe, we brought home a bag full of orchard apples and I have been on the search for yummy recipes. I'll let you know if I come across any others!
